Why should vintage chocolate be treated like good wine?

Dark chocolate, with its high cocoa content, has to ripen and to develop its flavour and taste over the years just as a first class red wine. However, the storage conditions must be optimal: exclusion of air and light, constant temperature and humidity. Once the vintage chocolate is transferred into our sales room, the conditions change and the refining process comes to a stop and this is why vintage chocolates also have a best-before date.
